I have been craving meatloaf since I moved back. Since Shelby isn't a big fan on it, I decided that I would make it tonight for dinner with sweet potatoes. Yum! The softball tournament I was at in Spring with the team got cancelled early this morning. So I got home, took a nap, went to Mass and ran to Kroger for the grocery list that was piling up. I didn't exactly go by a recipe but combined how Mom makes her's, an italian meatloaf recipe by Michael Ciarello, and a recipe in "Cook Yourself Thin." Oh and it was sooo delicious!!! I miss my Mom's and Grandmother's cooking. Shelby can make some dern good chicken but it's not the same.
Going back to softball...We lost Saturday afternoon to SFA & Texas State. We were supposed to play Ole Miss and UTSA today. We were up at 6 and left Spring by 7:15. This week, we play Blinn here (maybe a double-header) and I get to see my birthday twin, Lindsey Marik in action! I'm super excited especially since Blinn beat Baylor 9-2!!! Then, next Tuesday we play McClennan and Wednesday, Navarro. I also got to see Brittany Oates & Kayla Guanajuato on Saturday. They play for Alvin J.C. but aren't doing so hot but they're having fun and that's what matters.
Here's my meatloaf, sweet potato, and a pumpkin! You must know that I love pumpkins! I love autumn, the leaves, the weather, and Halloween (it's my 3rd favorite holiday although I'm not into dressing up - that's for the cute kids). There was a round hay bale in Tomball that was painted orange and had a Jack-o-latern face painted on it! I wanted to take a picture with it! Well there was a huge pumpkin patch so now I am determined to find a big one around here and go!
